Brief Statement of research work
My research experience includes extensive use of advanced analytical techniques to characterize bioactive compounds, protein structure, and processing-induced functional changes, all of which are central to the proposed work. I have routinely employed spectroscopic methods such as UV???Vis spectroscopy, FTIR, and fluorescence spectroscopy to quantify polyphenols, monitor protein secondary structure, and assess protein???phenolic interactions. I have strong hands-on experience with chromatographic techniques, including HPLC and UPLC, for the identification and quantification of phenolic compounds and antioxidant constituents, as well as antioxidant assays (DPPH, ABTS, FRAP) to evaluate bioactivity and stability under processing conditions.

Polyunsaturated fatty acids (PUFAs) are essential as human body can't produce them and we have to get them from diet. The edible oils available in the market, with major contribution from sunflower, canola, cotton seeds palm, contain no very less amounts of PUFAs particularly ?-3 and ?-6 fatty acids which are present in higher amounts in chia and flax seeds. In the current study, raw edible oils from canola, sunflower, soya bean and cotton seeds and palm oil were subjected to ultrasound application (VCX750, Sonics & Materials, USA) in the presence of chia and flax crushed seeds.

Impact of fruit processing modes on extracted juice quality: Conventional vs. Innovative technologies

Effects of ultrasound and microwave treatments to whole fruit and pulp of jambul and phalsa on the extraction yield and on the changes on Brix, pH, turbidity, color, phenolic content and antioxidant capacity of juices were investigated. Ultrasound treatment was optimized at 50% amplitude and 20 kHz for 10 min while microwave treatment at 600 W for 30 sec based on the expression yield. All the treatments despite of technology sample format have shown better results compared to untreated one. Among all, ultrasound treatment has shown promising results particularly in total phenolic contents in comparison to microwave and untreated juice samples.
